Additionally, 51N15T3R has confirmed the new PS3 Slim Bootscreen is also included in PS3 Firmware 3.0 for old PS3 consoles too!

To quote: "That "PS3" logo startup is on 3.00 regardless if you have a slim or phat PS3. verified phat PS3s use new "PS3" logo as on slims."

PS3 Firmware 3.0 Changelog:

195w ago - Shortly following the PlayStation 3 Slim Teardown from earlier today comes a video of the new PS3 Slim's bootscreen.

It incorporates the new PlayStation 3 Slim font logo, and speculation has begun that it may be included in the PS3 Firmware 3.0 update that is scheduled to arrive on September 1, 2009.

If it's true, the question remains: Why in that version? Unless perhaps a core file changed... time will tell.
