"Dash" media (DVD-R/-RW/-R DL) formats were created by the DVD Forum to already be as compatible as possible to the existing DVD-ROM format. Bitsetting, or changing the booktype of, "plus" (DVD Alliance) media is basically a trick to fool players that were never designed to read "plus" media into thinking that your "plus" disc is a regular manufactured DVD-ROM.

That is true. "Dash" media is slightly more compatible due to the fact that it was designed to be as close to the existing DVD-ROM standards as possible.

Honestly, use whatever works for your particular PS2. The bitsetting probably will not have too much of an effect on how easily your PS2 can read the data off the disc. It is mainly useful for owners of older PS2s that don't recognize "plus" media in the first place, not because of disc quality, but because of disc format.
