That is such a broad question that it is almost impossible to answer.
What kind of anime are you looking for? Comedy, serious, porn? Want something for an older audience or younger? Sci-fi? Action? Real life?

Ones I watched this year:
Best: 12 Kingdoms, Elfen Lied, Lunar Legend Tskehime, Zone of Enders, Bleach (through episode 15), Full Metal Alchemist, Full Metal Panic: Fummafu, Read or Die, Trigun.
Mid-Grade: Noir, Kenshin, Scrapped Princess
Not So good: Gunslinger Girls, and Naruto
Thats a lot of anime  I ended up watching less than an hour of real TV this year.

I've seen the majority of the ones Kraken mentioned and have a few of my own to add.
First off, Samurai Champloo from the creators of Cowboy Bebop. Next Chrono Crusade and finally Excel Saga, due largely to the insane and purely demented nature of the show

How DARE you! Naruto is a friggin' masterpiece. ZOE also sucks (no where near the quality of the games anyway). Don't listen to him Jak! Anyway, my short list (as one could tell, I stay away from the girly crap and stick with fighting oriented animes, since that's pretty much all anime does really well):
1. DB/DBZ/DBGT (a given)
2. Naruto

7. Ghost In The Shell (movies and episodes)

DBZ is actually a really bad anime. Granted when it came out in the US, it was way better than any of the American cartoons, and I did watch it every saterday back when it was on fox. But in comparison to the other animes I listed, its pathetic. They drag out a single battle for 10-20 episodes for cryin out loud (which is also why Bleach got lame after ep. 15), and since main characters die and get wished back every other episode, theres no emotional attachment either. Plus how much can they really power up, seriously. Super Saiyan 4 just isn't enough... The only thing about DBZ that is great is that its a "Gateway Anime" in that it got anime to the masses.
Naruto gets on my nerves. First off he's a whiny kid and I hate those (also a drawback of the first 10 eps of Scrapped Princess). Second, they have those battles that drag on as well. I have only seen 15 eps, but chances are im going to stop there though it might get much better (there are 150+ eps I suppose).
Anime is about way more than the fighting. Only a few of the animes I listed as the best have much fighting at all. That may turn off some, but I think that character development, emotional attachment and plot are way more important. I like a good fight as much as anyone, but fighting is the means to an end, not an end in and of itself. Balance is important. And no, I don't "watch" girlie anime but I have seen some and didn't like it. Its like an animated soap opera, which I suppose the girls like...

No, it is porn anime.
Huummm I watch a lot of anime everyday...
My favorite of all time is Serial Experiment Lain in the sc-fic category.
Evangelion (sc-fic)
In heroic-fantasy comedy, I like Slayers a lot.
In comedy, Excel Saga and Puni Puni Poemy, Full Metal Panic Fumoffu
Heroic Fantasy Gore , Berserk
In the gore comedy Elfen Lied was really something
Cowboy Bebop and Samurai Champloo are good too in comedy
I like the old classic as Harlock, Grendizer and Starblazer (Yamato)

134 got released yesterday... To be honest, if I only watched 15 random episodes of it, I'd probably agree. You really can't do a long running anime justice by doing that. Like DBZ (to many a morons' protest), Naruto has quite more than meets the eye at first glance. I'm not saying you're stupid, but these shows are popular for a reason
P.S.
Am I the only one who likes fights that drag on multi-episodes? Surely the Frieza battle was a little over-drawn, but even that doesn't bother me :FUNNY:

I agree with Boba Fett. Naruto pwns.
Anyways, at the moment, I'm only actually downloading and watching two animes.
Bleach and Naruto. Naruto, if you've only seen 15 episodes out of what is now like 134, then wow, you've missed out big time on quite possibly one of the best animes ever.
Bleach, at first didn't look that great at all to be honest. I was like heh, that's pretty kool, but just not that great. Then all of a sudden it got like super awsome. Just watched 31, it was damn amazing. So early, and I'm already ranking that up high with Naruto.
Anways, these are all newer anime that require subs and such to watch. If you want to see anime that's already out in the states. I highly recommend Cowboy Bebop, Trigun, Full Metal Alchemist(<-amazing) and any others people have said. Also, Samurai Champloo (another sweet ass one, but stoped at like ep20..) is comming out for Adult Swim May 18th. So I'll be watching that as well. Watch some of this stuff, it really all depends on what you watch. As people have said, it could be childish, or adultish, a whole range of types. If this is your first time, and just want to see a kickass non-kiddy anime, I highly recommend Cowboy Bebop as a first try.
