HTML5 video embedding is not meant to support flash, only ogv or mp4, I think..
As for youtube, there's already a HTML 5 beta version available: http://www.youtube.com/html5
Well with html5 flash maybe a thing of the past, who knows youtube has already started to support it as an alternative to adobe's flash.
